Step 1: Prepare the Potatoes

  • Immediately transfer the potatoes to a bowl of ice-cold water to stop the cooking process.
  • Drain and let them dry completely.

  • In a large bowl, add the potato strips and 3 tablespoons of cornstarch.
  • Toss well to ensure each fry is evenly coated—this helps create an ultra-crispy texture.
  • Place the coated potatoes in the fridge for 12 hours to allow the coating to set.

Step 3: First Fry (Creates a Crispy Shell)

  • Heat cooking oil in a deep pan over medium heat.

  • Remove and place them on a paper towel-lined plate to drain excess oil.
