Ingredients
  

  • 200g potatoes (peeled and thinly sliced)
  • 50g butter
  • 1 tablespoon garlic (minced)
  • 220ml water
  • 100g rice flour
  • 50g wheat flour
  • 1 egg
  • ½ teaspoon salt
  • ⅕ teaspoon black pepper
  • Cooking oil (for frying)

Instructions
 

Step 1: Steam the Potatoes

  • Peel and slice the potatoes into thin pieces.
  • Steam the potatoes for 15 minutes until soft.
  • Transfer the steamed potatoes into a large mixing bowl and mash them until smooth.

Step 2: Prepare the Dough

  • In a separate pan, melt the butter over medium heat.
  • Add garlic and sauté for 30 seconds until fragrant.
  • Pour in 220ml water and bring it to a boil.
  • Once boiling, turn off the heat and quickly add 100g rice flour and 50g wheat flour.
  • Stir well to combine, then return the pan to low heat and cook the dough for 2 minutes, stirring continuously.
  • Transfer the dough to the bowl of mashed potatoes and let it cool slightly.

Step 3: Add Seasonings & Egg

  • Add salt, black pepper, and 1 egg to the dough mixture.
  • Mix everything together until you get a smooth, pliable dough.

Step 4: Shape the Potato Rings

  • Place the dough into a piping bag or hopper.
  • Pipe the dough onto a parchment-lined tray, shaping it into ring-like circles.
  • Let the shaped rings rest for 5 minutes before frying.

Step 5: Deep Fry Until Golden & Crispy

  • Heat cooking oil in a deep pan over medium heat.
  • Carefully drop the potato rings into the hot oil and fry for 8 minutes, turning occasionally.
  • Once golden brown and crispy, remove from the oil and place on a paper towel-lined plate to drain excess oil.
