For the Lemonade:

  • 6 cups fresh watermelon, cut into chunks
  • ¾ cup fresh lemon juice (6-8 medium lemons)
  • ½ cup cold water (adjust as needed)
  • ½ cup fresh mint leaves, stems removed and lightly crushed
  • Ice, for serving
  • Fresh mint sprigs, for garnish
  • Lemon slices, for garnish

Instructions
 

  • Step 1: Prepare the Mint Simple Syrup (Optional)
    In a small saucepan, combine sugar, water, and crushed mint leaves over medium heat.
    Stir continuously until the sugar dissolves completely (about 2-3 minutes).
    Reduce the heat to low and let it simmer for 5 minutes to infuse the mint flavor.
    Remove from heat, strain to remove mint leaves, and let it cool.
  • Step 2: Blend the Lemonade
    In a blender, combine the watermelon chunks, fresh lemon juice, and cold water. Blend until completely smooth.
    Strain the mixture through a fine mesh sieve to remove any pulp or large particles.
    Taste the lemonade and, if desired, sweeten with the mint-infused simple syrup to your preference.
  • Step 3: Infuse with Fresh Mint
    Lightly bruise the fresh mint leaves with your fingers to release their essential oils.
    Add the bruised mint leaves to a large pitcher or glass jar and pour in the watermelon lemonade mixture. Stir well to infuse the flavors.
  • Step 4: Serve & Garnish
    Fill glasses with ice cubes (or frozen watermelon lemonade cubes).
