Equipment

  • Grill
  • Skewers
  • Mixing bowls
  • Grater
  • Knife and cutting board

Ingredients

For the Skewers:

  • 15 wooden skewers soaked in water for 30 minutes
  • 1 lb. chicken chunks
  • 1 lb. lamb chunks
  • 1 lb. pork chunks
  • Β½ cup olive oil
  • ΒΌ cup white wine
  • 2 tablespoons lemon juice
  • 2 garlic cloves minced
  • 1 tablespoon dried oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste

For the Tzatziki Sauce:

  • 1 cup strained Greek yogurt
  • 1 cucumber grated and squeezed dry
  • 2 garlic cloves minced
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  • Marinate the Meat:
In a large bowl, combine olive oil, white wine, lemon juice, garlic, oregano, cumin, salt, and pepper. Add the chicken, lamb, and pork chunks into separate containers, pouring the marinade equally into each. Marinate for at least 1 hour (or overnight for best results).
  • Prepare Tzatziki:
While the meat marinates, make the Tzatziki sauce by combining Greek yogurt, grated cucumber, garlic, dill, olive oil, lemon juice, salt, and pepper. Mix well and refrigerate until ready to serve.
  • Skewer the Meat:
Preheat the grill to medium-high heat. Thread the marinated chicken, lamb, and pork onto soaked wooden skewers, alternating the types of meat if you wish.
  • Grill the Skewers:
Grill the skewers for about 8-10 minutes, turning occasionally, until the meat is cooked through and slightly charred.
  • Serve:
Serve the skewers with a generous dollop of Tzatziki sauce, pita bread, and a side Greek salad for the ultimate Mediterranean feast.

Notes

  • Feel free to substitute with other meats such as beef or add fresh vegetables like bell peppers and onions to the skewers for variety.
  • For a vegetarian option, use halloumi cheese or tofu in place of meat, marinating them in the same blend of herbs and spices.
  • Tzatziki sauce can be made up to 1 day in advance to enhance the flavors.
Serving Suggestions:
These skewers pair perfectly with grilled pita bread, roasted potatoes, or a fresh Greek salad. For a complete meal, enjoy with a chilled glass of ouzo, white wine, or lemon-infused iced tea.
