Ingredients
  

Tiramisu Truffle Mixture

  • ⅓ cup mascarpone cheese, preferably at room temperature
  • 12 savoiardi biscuits or ladyfingers, about 3.5 ounces or 100 grams
  • 3 tablespoons brewed espresso, cooled
  • 3 teaspoons powdered sugar, sifted

For Coating

  • Cocoa powder, as needed for dusting

Instructions
 

  • Prepare the Espresso

    Brew the espresso and set it aside to cool completely.
  • Crush the Ladyfingers

    While the espresso cools, place the savoiardi biscuits in a blender or food processor.
    Process until they become fine crumbs with a powder-like texture.
  • Make the Mascarpone Mixture

    Add the mascarpone and sifted powdered sugar to a medium bowl.
    Pour in the cooled espresso and stir until smooth and evenly combined.
  • Add the Ladyfinger Crumbs

    Add the finely crushed ladyfingers to the mascarpone mixture.
    Fold everything together with a rubber spatula until fully combined.
    The mixture should be thick and soft, similar to cookie dough
  • Shape the Truffles

    Scoop approximately 1 teaspoon of the mixture at a time.
    Roll gently between your hands to form a ball and place it on a plate.
    Repeat with the remaining mixture to make about 10 truffles.
  • Chill

    Refrigerate the shaped truffles for at least 1 hour.
    For a firmer texture, chill them longer before coating.
  • Coat with Cocoa Powder

    Place cocoa powder in a small bowl.
    Roll each chilled truffle in the cocoa powder until lightly and evenly coated.
    Serve chilled or slightly softened

Notes

  • Mascarpone: Room-temperature mascarpone mixes more smoothly with the espresso and powdered sugar.
  • Espresso: Let the coffee cool before adding it to the mascarpone so the cheese stays thick and creamy.
  • Texture: The centers are meant to stay soft. Chill them longer if you prefer a firmer truffle.
  • Ladyfingers: Process the biscuits into fine crumbs so they blend evenly into the mascarpone mixture.
  • Cocoa coating: Coat the truffles after chilling so the cocoa adheres without making the surface too messy.
  • Serving: These can be made ahead and kept chilled until ready to serve.
