Make the Chocolate Mixture:In a medium saucepan over low heat, melt 1/2 lb (226g) of unsalted butter and 2 cups (12 oz) of semi-sweet chocolate chips. Stir continuously until melted and smooth. Remove from heat and let the mixture cool for about 15 minutes until just warm. Prepare the Wet Ingredients:In a large mixing bowl, whisk together 4 large eggs, 1 1/4 cups of granulated sugar, 1 Tbsp instant coffee granules, 1 Tbsp vanilla extract, and 3 Tbsp vegetable oil until well combined. Mix the Dry Ingredients:In a separate bowl, whisk together 2/3 cup all-purpose flour, 1/2 cup unsweetened cocoa powder, 1 1/2 tsp baking powder, and 1/2 tsp salt until thoroughly combined. Combine Wet and Dry Ingredients:Gently fold the dry ingredients into the chocolate mixture using a spatula until fully combined and smooth. Be careful not to over-mix the batter. Add the Chocolate Chips:Fold in the remaining 1/2 cup of semi-sweet chocolate chips into the batter. Pour the batter into the prepared baking pan and spread it evenly.
