  • For the Brownies:
  • 1/2 lb 226g unsalted butter, softened
  • 16 oz 2 1/2 cups semi-sweet chocolate chips, divided
  • 4 large eggs
  • 1 Tbsp instant coffee granules 6.2g
  • 1 Tbsp vanilla extract
  • 1 1/4 cups 250g granulated sugar
  • 2/3 cup 85g all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 Tbsp vegetable oil
  • 1/2 cup 50g unsweetened cocoa powder

Instructions
 

  • Prepare the Baking Pan:
    Preheat your oven to 350°F (175°C). Butter and line a 9x9-inch baking pan with parchment paper for easy removal.
  • Make the Chocolate Mixture:
    In a medium saucepan over low heat, melt 1/2 lb (226g) of unsalted butter and 2 cups (12 oz) of semi-sweet chocolate chips. Stir continuously until melted and smooth. Remove from heat and let the mixture cool for about 15 minutes until just warm.
  • Prepare the Wet Ingredients:
    In a large mixing bowl, whisk together 4 large eggs, 1 1/4 cups of granulated sugar, 1 Tbsp instant coffee granules, 1 Tbsp vanilla extract, and 3 Tbsp vegetable oil until well combined.
  • Combine Chocolate and Wet Mixtures:
    Slowly pour the cooled chocolate mixture into the wet ingredients, whisking continuously until the mixture is smooth and glossy.
  • Mix the Dry Ingredients:
    In a separate bowl, whisk together 2/3 cup all-purpose flour, 1/2 cup unsweetened cocoa powder, 1 1/2 tsp baking powder, and 1/2 tsp salt until thoroughly combined.
  • Combine Wet and Dry Ingredients:
    Gently fold the dry ingredients into the chocolate mixture using a spatula until fully combined and smooth. Be careful not to over-mix the batter.
  • Add the Chocolate Chips:
    Fold in the remaining 1/2 cup of semi-sweet chocolate chips into the batter. Pour the batter into the prepared baking pan and spread it evenly.
  • Bake the Brownies:
    Bake in the preheated oven at 350°F (175°C) for 35-40 minutes. At 35 minutes, you will have a fudgier brownie, while at 40 minutes, they will still be moist but slightly less gooey.
    A toothpick inserted into the center should come out with a few moist crumbs, but not completely dry.
