Equipment

  • Baking dish
  • Parchment paper
  • Fork
  • Knife
  • Spoon

Ingredients

  • 4 large baking potatoes
  • 1 tablespoon olive oil
  • 1 cup marinara sauce
  • 1 8 oz. ball fresh mozzarella, sliced
  • 1 cup cherry tomatoes halved
  • ¼ cup fresh basil leaves thinly sliced
  • Sea salt and black pepper to taste

Instructions

  • Preheat Oven:
Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
  • Prepare Potatoes:
Pierce the potatoes with a fork and rub them with olive oil. Sprinkle generously with sea salt and black pepper.
  • Bake Potatoes:
Place the potatoes in the prepared dish and bake for 45-60 minutes, or until tender and easily pierced with a fork.
  • Cool and Scoop:
Once baked, allow the potatoes to cool slightly. Slice them in half lengthwise, then scoop out the flesh, leaving a ¼-inch thick shell.
  • Mash and Season:
Mash the potato flesh with a fork, season with a little more salt and pepper, and spoon in a layer of marinara sauce.
  • Top with Caprese Ingredients:
Top each potato half with slices of mozzarella, halved cherry tomatoes, and a sprinkle of fresh basil.
  • Bake Again:
Return the potatoes to the oven for an additional 5-10 minutes, until the cheese is melted and bubbly.
  • Serve and Enjoy:
Remove from the oven, garnish with more fresh basil, and serve immediately.

Notes

  • For an extra crispy finish, broil the potatoes for the last 2-3 minutes of baking.
  • If you prefer, you can substitute fresh tomatoes for marinara sauce or use another melty cheese like gouda or provolone.
  • Leftovers can be stored in the refrigerator in an airtight container for up to 2 days and reheated in the oven.
Serving Suggestions:
These Caprese Twice-Baked Potatoes are a meal in themselves but pair wonderfully with grilled chicken, steak, or a fresh green salad. A light white wine or rosé is an excellent complement to the flavors.
Storage Tips:
  • Cool completely before storing in an airtight container.
