Chocolate Ganache
- 7 ounces (200 g) dark chocolate, finely chopped
- 4 tablespoons caramel sauce (homemade or store-bought)
- 4 tablespoons heavy cream
- 5 tablespoons (75 g) unsalted butter, cubed
- 2 teaspoons flaky sea salt
Coating
- 4 tablespoons unsweetened cocoa powder, sifted
Optional Coatings
- Finely chopped toasted hazelnuts
- Finely chopped pistachios
- Chocolate sprinkles
- Chocolate curls
- Cocoa nibs
- Melted white chocolate for dipping
Step 1: Prepare the Ganache
Place the finely chopped dark chocolate into a large heatproof bowl.
In a small saucepan, combine the caramel sauce, heavy cream, butter, and flaky sea salt.
Heat over medium heat until the butter has completely melted and the mixture is hot and steaming. Do not allow it to boil.
Remove the saucepan from the heat.
Slowly pour the hot caramel mixture over the chopped chocolate.
Let the mixture sit undisturbed for 1 minute.
Using a fork or silicone spatula, gently stir from the center outward until the chocolate melts completely and the ganache becomes smooth, glossy, and uniform.
Step 2: Chill the Ganache
Place the cocoa powder on a shallow plate or small bowl.
Scoop approximately 1 teaspoon of chilled ganache and quickly roll it into a ball with your hands.
Roll each truffle in the cocoa powder until evenly coated.
Repeat with the remaining ganache.
Step 4: Chill and Serve
Arrange the coated truffles on a parchment-lined tray.
Refrigerate for another 1 hour, or until firm.
Let the truffles sit at room temperature for 5 to 10 minutes before serving for the smoothest texture.
- Finely chopping the chocolate helps it melt evenly and creates an ultra-smooth ganache.
- Avoid boiling the cream mixture, as excessive heat can affect the texture of the chocolate.
- If the ganache becomes too soft while rolling, refrigerate it for 15 to 20 minutes before continuing.
- For a different finish, coat the truffles in chopped nuts, chocolate sprinkles, cocoa nibs, or dip them in melted white chocolate.
- Store the truffles in an airtight container in the refrigerator for up to 5 days.
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before serving.
- Allow chilled truffles to rest at room temperature for several minutes before serving so the centers become soft and creamy.
