Ingredients
  

  • 1 tablespoon coconut oil
  • 1 pound flank steak, thinly sliced against the grain
  • 2½ cups fresh pineapple chunks
  • 3 tablespoons tamari or coconut aminos
  • 3 scallions, thinly sliced

Optional

  • Salt and freshly ground black pepper, to taste

Instructions
 

  • Heat oil – In a large wok or high-sided skillet, heat coconut oil over high heat.
  • Cook beef & pineapple – Add sliced beef and pineapple to the pan. Season lightly with salt and pepper if desired. Stir-fry for 2–3 minutes, until beef is browned and pineapple is slightly caramelized.
  • Add sauce – Pour in tamari (or coconut aminos). Stir-fry for another 1–2 minutes, until sauce is hot and bubbling.
  • Finish & serve – Remove from heat and stir in scallions. Serve immediately with rice, noodles, or steamed vegetables.
