One Pot Spicy Pork & Sweet Potato Stew

Ingredients
  

  • 2 tablespoons extra virgin olive oil
  • 1 medium red onion, diced
  • 2 celery stalks, diced
  • 2–3 garlic cloves, minced
  • Sea salt and freshly ground black pepper, to taste
  • 1¼ pounds pork tenderloin, cut into 1-inch cubes
  • 2 medium sweet potatoes, peeled and cubed (1-inch pieces)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 teaspoon ground cumin
  • ½ teaspoon chili powder
  • 2 teaspoons Italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • 2 bay leaves
  • 1 (14-ounce) can crushed tomatoes
  • 2 cups low-sodium chicken stock
  • ¼ cup fresh parsley, chopped (divided)

Instructions
 

  • Sauté the Aromatics
    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add onion, celery, and garlic. Season with salt and pepper. Cook 3–4 minutes, stirring frequently, until softened and lightly browned.
  • Brown the Pork
    Add pork tenderloin cubes and sweet potatoes to the pot. Cook 2–3 minutes, stirring occasionally, until the pork starts to brown.
  • Add Spices & Beans
    Stir in black beans, cumin, chili powder, Italian seasoning, red pepper flakes, and bay leaves. Cook 30 seconds, just until fragrant. Adjust seasoning as needed.
  • Simmer the Stew
    Pour in crushed tomatoes and chicken stock. Bring to a boil, then reduce heat to medium and simmer 13–15 minutes, stirring occasionally, until the pork is tender and the sweet potatoes are fork-soft.
  • Finish & Serve
    Remove from heat and discard bay leaves. Stir in 3 tablespoons of parsley, taste, and adjust seasoning. Garnish with the remaining parsley before serving.
