  • 1 8 oz. can water chestnuts, drained and chopped
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons rice vinegar
  • 8-10 large lettuce leaves butter lettuce or iceberg works best
  • 2 scallions sliced
  • ยผ cup roasted salted cashews roughly chopped
  • Lime wedges for serving
  • Salt and pepper to taste

Instructions
 

  • Heat the Skillet:
    In a large, deep skillet over medium heat, add the coconut oil.
  • Cook the Vegetables and Pork:
    Add the diced onion, minced garlic, carrots, mushrooms, and ground pork. Season lightly with salt and pepper, and cook for 4-5 minutes, stirring occasionally, until the pork is browned and the vegetables are soft.
  • Add Water Chestnuts:
    Stir in the chopped water chestnuts and cook for another 2-3 minutes until the pork is fully cooked.
  • Prepare the Sauce:
    Lower the heat to medium-low and add the soy sauce, oyster sauce, sesame oil, and rice vinegar. Stir occasionally and cook for 6-7 minutes until the sauce thickens.
  • Assemble the Wraps:
    Spoon the pork mixture into the lettuce leaves. Top with sliced scallions and chopped roasted cashews.
  • Serve:
    Serve the wraps with lime wedges for an added zesty flavor.
