Ingredients
  

For the Sponge Cake/Ladyfingers:

  • 65g (½ cup) almond flour
  • Pinch of salt
  • ½ teaspoon baking powder
  • 20g (1½ tablespoons) powdered sweetener
  • 54g (1 large egg)
  • 45g (¼ cup) heavy cream
  • 30g (2½ tablespoons) butter, melted

For the Mascarpone Cream:

  • 250g mascarpone cheese
  • 2 medium eggs (or 70g heavy cream, whipped, as an alternative)
  • 50g (¼ cup) powdered sweetener
  • 150ml (1¼ cup) brewed coffee, cooled
  • 1 teaspoon cocoa powder (for dusting)

Instructions
 

Prepare the Sponge Cake/Ladyfingers:

  • Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper (or grease a ladyfingers mold if using).
  • In a mixing bowl, whisk together almond flour, salt, baking powder, and powdered sweetener.
  • In a separate bowl, mix the egg, heavy cream, and melted butter until smooth. Combine the wet and dry ingredients to form a batter.
  • Spread the batter onto the prepared baking tray or spoon it into a ladyfingers mold.
  • Bake for 10-15 minutes, or until lightly golden and firm. Allow to cool before cutting into strips if not using a mold.

Prepare the Mascarpone Cream:

  • If using eggs: Whisk the eggs with powdered sweetener until light and fluffy. Fold in the mascarpone cheese until smooth and creamy.
  • If using whipped cream: Whip the heavy cream to soft peaks and gently fold in the mascarpone cheese and powdered sweetener until well combined.

Assemble the Tiramisu:

  • Dip the ladyfingers or sponge strips into the cooled coffee, ensuring they are soaked but not overly soggy.
  • In a serving dish, layer the soaked sponge at the base, followed by a generous layer of mascarpone cream. Repeat the layers as desired, ending with a cream layer.
  • Dust the top with cocoa powder.

Chill and Serve:

  • Refrigerate for at least 2 hours to allow the flavors to meld. Serve chilled and enjoy!
