Ingredients
  

  • 1 medium cauliflower head sliced into ½-inch thick steaks
  • 1 tablespoon olive oil
  • ½ cup Italian seasoned panko breadcrumbs
  • 3 tablespoons grated Parmesan cheese
  • ½ teaspoon dried basil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • ¼ cup fresh parsley chopped (for garnish)
  • Sea salt and black pepper to taste

Substitutes:

  • Gluten-free Panko Use gluten-free panko breadcrumbs for a gluten-free version.
  • Vegan cheese Swap with vegan Parmesan and mozzarella for a dairy-free alternative.
  • Regular breadcrumbs If you don't have panko, regular breadcrumbs with added Italian seasoning work well.

Instructions
 

  • Preheat Oven:
    Preheat your oven to 400°F (200°C).
  • Prepare Baking Sheet:
    Line a large-rimmed baking sheet with parchment paper.
  • Slice Cauliflower:
    Slice the cauliflower head into ½-inch thick steaks. Some pieces may fall apart, but they will still cook perfectly.
  • Season Cauliflower:
    Arrange the cauliflower steaks on the baking sheet. Drizzle with olive oil, and season with sea salt and black pepper.
  • Mix Breadcrumbs & Cheese:
    In a small bowl, mix together the panko breadcrumbs, grated Parmesan cheese, and dried basil.
  • Coat the Cauliflower:
    Sprinkle the breadcrumb mixture evenly over the cauliflower steaks, ensuring each piece is well-coated.
  • Bake the Cauliflower:
    Bake for 20-25 minutes, until the cauliflower is tender and the breadcrumbs are golden brown.
  • Add Marinara & Mozzarella:
    Remove the cauliflower from the oven, spoon marinara sauce on each steak, and sprinkle shredded mozzarella on top.
  • Bake Again:
    Return the cauliflower to the oven for another 10-15 minutes, until the cheese is melted and bubbly, and the edges are crispy.
  • Garnish & Serve:
    Remove from the oven, garnish with fresh parsley, and serve immediately.

Notes

  • For an extra crispy texture, broil the cauliflower for the last 2-3 minutes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • For a spicier version, add red pepper flakes to the breadcrumb mixture.
