These mini flower-shaped sweet potato pizzas are a delightful twist on traditional pizza—using flattened sliced bread as the base and a creamy sweet potato filling. Topped with melted mozzarella and sweet corn, they can be served sweet or savory. Quick, creative, and crowd-pleasing, they’re perfect for brunches, snacks, or lunchboxes!

Ingredients
  

  • 400g sweet potatoes
  • 100–150g canned sweet corn (drained)
  • 100ml milk (adjust as needed)
  • 2 tbsp honey
  • 12 slices sandwich bread (crusts removed)
  • 120–150g shredded mozzarella
  • Tomato sauce (optional, for savory version)
  • Butter (for greasing muffin tin)
  • Fresh parsley (optional, for garnish)

Instructions
 

Cook & Mash the Sweet Potatoes

  • Peel and chop the sweet potatoes into chunks.
  • Microwave Method: Place in a microwave-safe bowl with 50ml water, cover, and microwave for 5 minutes. Stir, add another 50ml water, and microwave for 2.5 more minutes until soft.
  • No Microwave? Simply boil in water for 15–20 minutes until fork-tender, then drain.
  • Mash the cooked sweet potatoes.
  • Add milk gradually until the mixture is soft and smooth.
  • Stir in honey and sweet corn, then set aside.

Prepare the Bread Cups

  • Trim crusts from bread slices.
  • Flatten each slice with a rolling pin.
  • Grease a muffin tin lightly with butter.
  • Fold and press the bread into each muffin cup to create a flower shape.

Assemble the Mini Pizzas

  • Spoon in the sweet potato filling.
  • For savory versions, top with a spoonful of tomato sauce.
  • Sprinkle with mozzarella cheese.

Bake & Serve

  • Bake in a preheated oven at 200°C (392°F) for 5–7 minutes, or until cheese is melted and bread edges are golden.
  • Optionally, broil briefly for a bubbly, browned top—cover edges with foil to prevent burning.
  • Garnish with parsley if desired and serve warm.

Notes
