Equipment

Ingredients
  

  • 400g potatoes (peeled)
  • 90g cornstarch
  • 2/3 tsp salt
  • 1/2 tsp chili powder (optional for a hint of spice)
  • 4 tbsp cooking oil (plus more for deep frying)

Instructions
 

  • Prep the Potatoes:
    Peel and chop the potatoes into small pieces for faster cooking.
    Place in a pot, cover with water, and boil for about 13 minutes until soft.
    Drain and mash the boiled potatoes until smooth.
  • Make the Dough:
    Add cornstarch, salt, chili powder, and 4 tbsp of cooking oil to the mashed potatoes.
    Mix until everything comes together into a soft, pliable dough.
  • Shape the Fries:
    Transfer the dough to a piping bag fitted with a 1.2cm round tip. (You can also shape them by hand.)
    Pipe or roll the dough into finger-length sticks.
  • Fry the Fries:
    Heat oil in a deep pan over medium heat.
    Fry the potato sticks in batches for about 7 minutes or until they start to harden.
    Lower the heat to medium-low and continue frying until golden and crispy.
    Remove and drain on paper towels.
  • Serve:
    Serve warm with ketchup or your favorite dip. Perfect on their own or with a cold drink!

Pro Tips & Variations:

  • Don’t Overboil: Boil the potatoes until just fork-tender. Overcooking may make the dough sticky.
  • No Piping Bag? No problem! Roll the dough into logs by hand and cut to size.
  • For Extra Crispiness: Double-fry—first at medium heat, then briefly again at high heat.
  • Add Cheese or Herbs: Mix in grated parmesan or dried herbs like oregano for a flavor twist.
