Ingredients
  

  • 3 tablespoons extra virgin olive oil
  • 6 chicken thighs bone-in, skin off
  • 1 large onion thinly sliced
  • 8 oz. mushrooms chopped
  • 4 garlic cloves minced
  • 1 red bell pepper thinly sliced
  • ΒΌ cup dry red wine Chianti or Sangiovese recommended
  • 2 14-oz. cans crushed tomatoes
  • 1 teaspoon dried oregano
  • Β½ teaspoon red pepper flakes
  • Β½ cup black olives halved
  • 2 teaspoons capers
  • ΒΌ cup fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

  • Sear the Chicken:
    Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium heat. Season the chicken thighs with salt and pepper, then cook for 4-5 minutes on each side until golden brown. Set aside.
  • Cook the Vegetables:
    In the same skillet, add the onions and mushrooms, and season with a bit of salt. SautΓ© for 4-5 minutes, until the onions are translucent and the mushrooms are soft. If needed, add another splash of olive oil.
  • Add Garlic & Bell Pepper:
    Stir in the garlic and sliced red bell pepper. Cook for 2-3 minutes until fragrant.
  • Deglaze with Wine:
    Pour in the red wine and let it simmer for 1-2 minutes, allowing the alcohol to cook off.
  • Build the Sauce:
    Add the crushed tomatoes, oregano, red pepper flakes, olives, and capers. Stir everything together and let the sauce simmer for a few minutes.
  • Cook the Chicken:
    Nestle the seared chicken thighs back into the sauce. Lower the heat and let it simmer for 30-35 minutes, or until the chicken is fully cooked and tender.
  • Finish & Serve:
    Stir in the chopped parsley and adjust seasoning to taste. Serve the Chicken Cacciatore over spaghetti, polenta, or with a side of crusty bread.

  • For an authentic Italian twist, use Chianti or Sangiovese wine to add depth to the sauce.
  • Leftovers can be stored in the refrigerator for up to 3 days and taste even better the next day as the flavors meld.
