- 4 garlic cloves minced

- ΒΌ cup dry red wine Chianti or Sangiovese recommended
- 2 14-oz. cans crushed tomatoes
- 1 teaspoon dried oregano
- Β½ teaspoon red pepper flakes
- Β½ cup black olives halved
- 2 teaspoons capers
- ΒΌ cup fresh parsley chopped
- Salt and pepper to taste
Sear the Chicken: Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium heat. Season the chicken thighs with salt and pepper, then cook for 4-5 minutes on each side until golden brown. Set aside. Deglaze with Wine: Pour in the red wine and let it simmer for 1-2 minutes, allowing the alcohol to cook off. Build the Sauce: Add the crushed tomatoes, oregano, red pepper flakes, olives, and capers. Stir everything together and let the sauce simmer for a few minutes. Cook the Chicken: Nestle the seared chicken thighs back into the sauce. Lower the heat and let it simmer for 30-35 minutes, or until the chicken is fully cooked and tender. Finish & Serve: Stir in the chopped parsley and adjust seasoning to taste. Serve the Chicken Cacciatore over spaghetti, polenta, or with a side of crusty bread.
