Start the base – In a large soup pot or Dutch oven, warm olive oil over medium heat. Add onion and garlic, season with salt and pepper, and cook for 3–4 minutes until softened and fragrant.
Add spices – Stir in thyme and paprika, cooking for 1–2 minutes until aromatic.
Simmer vegetables – Add cauliflower, potato, and vegetable broth. Partially cover with a lid and simmer for 15–20 minutes, or until vegetables are tender when pierced with a fork.
Blend until smooth – Remove from heat and puree with an immersion blender (or in batches in a regular blender) until velvety.
Finish with cream – Stir in the heavy cream. Taste and adjust seasoning as needed.
