Ingredients
  

  • 1 cup all-purpose flour
  • 2–4 tablespoons sugar (adjust to taste)
  • 1 large egg
  • 1 cup evaporated milk
  • 1/2 cup water
  • 1/2 tsp salt
  • 1 tsp nutmeg
  • 1/2 tsp butter flavor (optional)
  • 1 tsp pineapple extract (or vanilla extract)
  • Oil for frying

Instructions
 

Prepare the Batter:

  • Crack the egg into a small bowl to ensure no shells, then add it to a blender.
  • Add evaporated milk, water, sugar, salt, nutmeg, butter flavor (if using), and pineapple extract.
  • Finally, add the flour to the blender. This ensures the flour doesn’t stick to the sides.
  • Blend everything together briefly until smooth. Do not overmix.
  • Check the consistency: The batter should be thin enough to coat the back of a spoon and hold a line when drawn with your finger.

Heat the Pan and Fry:

  • Heat a frying pan or skillet over medium-low heat. Add a small amount of oil and swirl to coat the surface.
  • Pour a ladleful of batter into the pan. Quickly tilt and rotate the pan to spread the batter evenly into a thin layer.
  • Cook until the edges begin to brown lightly, about 1–2 minutes.
  • Flip the pancake carefully using a spatula and cook the other side until golden, about 30–60 seconds.

 Repeat and Serve:

  • Remove the cooked pancake and set it aside on a plate.
  • Repeat the process, adding a bit more oil to the pan as needed, until all the batter is used.
  • Serve warm with syrup, ice cream, fruit, or any topping of your choice.
