- 125g honey
- 125g granulated sugar
- 2 egg whites (from medium eggs, ~70g)
- 250g roasted peanuts
- (Optional: powdered sugar for dusting)
Heat Honey & Sugar:In a saucepan over very low heat, combine honey and sugar. Stir occasionally and cook for about 30 minutes until the sugar is fully dissolved and the mixture thickens slightly. Whip Egg Whites:While the syrup cooks, beat the egg whites in a clean bowl until stiff peaks form. You’ll know they’re ready when they don’t fall off the whisk. Combine Mixtures:Slowly add the hot syrup one spoonful at a time into the whipped egg whites, mixing well after each addition. This will create a fluffy, glossy mixture. Cook Again:Return the combined mixture to the stovetop and cook over low heat, stirring constantly for 30–35 minutes, until it thickens and pulls away from the sides of the pan. Add Peanuts:Stir in the roasted peanuts and mix until evenly combined. Cook for 2 more minutes. Shape & Cool:Transfer the nougat to a mold or dish (lined with parchment paper), about 14×20 cm in size. Press to flatten. Let it sit at room temperature for a few hours or until fully cooled and set. Serve:Optionally dust with powdered sugar. Cut into small squares and enjoy!
