  • 4 cups water
  • 1 cup milk
  • 1 teaspoon sea salt
  • 1 cup coarse ground polenta or cornmeal
  • 5 tablespoons butter divided
  • ยฝ cup freshly shredded Parmesan cheese 2 oz., plus more for serving
  • Fresh rosemary or parsley optional for serving

Instructions
 

  • In a medium saucepan, combine the water and milk, and bring it to a gentle boil over medium heat.
  • Once the liquid is boiling, add the sea salt. Gradually whisk in the polenta (cornmeal), stirring continuously to prevent lumps.
  • Reduce the heat to low, allowing the polenta to simmer. Stir occasionally to ensure the mixture doesnโ€™t stick to the pan, for about 25-30 minutes until the polenta thickens and becomes creamy.
  • Once the polenta is cooked, remove it from the heat and stir in 4 tablespoons of butter and the Parmesan cheese. Mix well until the butter and cheese melt and combine smoothly.
  • Taste the polenta and adjust the seasoning with additional salt if needed.
  • To serve, scoop the polenta into bowls, top with the remaining butter, extra Parmesan cheese, and a sprinkle of fresh herbs like rosemary or parsley if desired.

Notes

  • For a creamier version, you can substitute half of the water with more milk or use chicken/vegetable broth for added flavor.
